Avocado Toast with Egg & Asparagus

I think this is what Doctor Seuss was eating when he wrote Green Eggs and Ham, he just forgot the comma between Green and Eggs! (Dad jokes? I am too young for this) Lovely green avocado smash, charred asparagus and a runny egg with some turkey, truly the breakfast of champions (and Dr. S!).

I grew up eating toast, mamma's homemade bread slathered in butter that melted into it so nicely and topped with sweet jam. Man, forever one of my favorite foods. Toast is just so wonderful and I know it has been a trend to experiment with toasts and trends come and go but I hope this one last forever. I mean cmon people its warmed up bread with a slight crunch topped with any of your favorite things!


One of this favorite things of mine? Avocados! Yes, yes I am basic, I know but its delicious and you can't convince me otherwise.The key to a really great avocado toast it mashing half of your avocado and leave the rest a bit chunky, much like a good guacamole. Next: season it! Like all the people screaming in Tasty's comment section "where are the seasonings?!?!?!" you have to be like that too with your avocado. Salt, pepper, a little bit of cumin, onion powder, fresh garlic or garlic powder and oregano. Squeeze some lemon on top and bam you got yourself a restaurant quality mash for your toast!



This flavor profile is complimented so well by Honey Smoked Turkey and a warm runny egg! Don't forget the asparagus, have to get your green veggies in there! Not only is asparagus so good for you but its delicious too. Just get it on a sheet pan or in a hot pan over the stove with salt and pepper and thats it! Simplicity is often the best approach especially when it come to veggies! You have to let them shine!

INGREDIENTS

  • 4 eggs

  • 1 lb. asparagus

  • 2 avocados

  • 1/4 tsp cumin

  • 1/2 tsp onion powder

  • 1/2 tsp dried oregano

  • 1 minced garlic clove or 1 tsp garlic powder

  • juice of 1 lemon

  • 4 slices wholegrain bread

  • 4 oz Honey Turkey

  • Salt&Pepper

Directions

  1. Preheat oven to 400 degrees Fahrenheit and line a sheet pan with nonstick aluminum foil

  2. Cut the hard ends off of the asparagus, a good trick for the is to take one stalk and pinch with your two fingers towards the bottom and snap the bottom part off. However much snaps off (usually about an inch or so) is a good reference to use when cutting the rest of the asparagus

  3. Place the asparagus onto the sheet pan and season with salt and pepper, pop into the oven for 10 min

  4. In the meant time mash one on your avocados until it is smooth and either dice or partially mash the other one so you have a chunky consistency

  5. Season the mash with cumin, onion powder, oregano, and garlic. Squeeze one lemon in and stir to combine everything

  6. For the eggs, heat a nonstick skillet over high heat.

  7. Crack eggs one at a time into a bowl and then for into skillet. This way if you break an egg or get shell in a long the way it won't be directly into the pan

  8. Once the whites of the eggs begin to solidify add a splash of water to the pan and cover with a lid. Remove from heat and let sit covered for 1-2 min or until the whites have completely set and your yolk is just beginning to cloud over

  9. Toast your bread and portion out avocado smash on it then the turkey

  10. You can serve the asparagus on the side, diced into your mash or right on top - it's up to you! Top off with egg and some finishing salt and pepper.

  11. Enjoy!
