One of the things I ALWAYS keep in my pantry is Kodiak Mix, whether its the pancake, muffin or brownie mix I will have one or all of them. Recently on the hunt for the perfect healthy protein muffin I started experimenting with Kodiak's muffin mix and discovered the most wonderful protein muffin that is low in fat and sugar-MMM!

When I am baking my cakes for my friends and family I never use boxed mix only because its my chance to be very creative and improve my baking skills. During the week though when I am meal prepping quick, easy and delicious is what I am aiming for. With a product like Kodiak Mix you truly can't go wrong. If you look at their ingredients you know everything thats in it and they're whole wheat! It's truly a perfect short cut.
I have always tried to make healthy muffins where I replace the fat in the recipe with yogurt or mashed fruit. Sometimes I am more successful than others. Doing this often turns out an all too dense and moist baked good, that tastes raw. HOWEVER, this recipe comes out beautiful and tasty and it. is. so. easy!! It has now become a staple in my meal plans.
They're great for breakfast, a snack or post workout protein boost. They keep very well in the fridge and are just truly spectacular. My formula is very simple for this, Kodiak Cake calls for 2 eggs, 1/4 cup oil and 1 cup milk in addition to their mix. I simple swapped it out for 3 egg whites, 1 chobani less sugar yogurt (in this case blueberry to compliment the mix flavor) and cashew almond milk with has 10g of additional protein!

These can be made vegan by replacing the yogurt with a dairy free alternative and following these rules for replacing eggs:
2 tbsp ground flax seeds
6 tbsp water
1 tbsp neutral oil
2 tsp baking powder
Combine the flax seeds with the water and let stand for 20 min
Add the flax seed mixture, oil and baking powder to the muffin recipe!
I have been playing around a lot with the flavors and the possibilities are endless. Kodiak Muffins have 3 flavors: Chocolate Chip, Double Chocolate and Blueberry Lemon. Mix that with the yogurt flavors, fresh fruit, nuts and oats and you can have a new muffin every week and never get tired of them!

INGREDIENTS
1 Box Kodiak Blueberry Lemon Muffin Mix
3 Egg-whites
1 cup Almond Cashew Milk
1 Chobani Less Sugar Blueberry Yogurt
1 tsp lemon zest
Directions
Preheat Oven to 375 degrees fahrenheit and prepare a muffin pan by spraying it with oil and lining with cupcake liners (make sure to spray each cupcake mold as well as the liners!)
Whisk egg whites, milk, and yogurt together
Add in Muffin Mix and whisk until smooth
Stir in lemon zest
Evenly divide muffin mix into tin and bake for 12-15 min
That's it! Voila!
