Coconut Chocolate Muffins

Moist chocolatey protein Kodiak Muffins with bits of shredded coconut. These lovely muffins are so easy to whip up and even easier to gobble down, almost too sinfully good to be healthy.

I have really been having so much fun with these Kodiak muffin mixes and I have a whole list of ideas to try out. I can't say it enough how amazingly easy they are to make and they're a life savor when the week gets busy, I can't tell you how many times I have grabbed one of these while running out of the house because I accidentally slept in.


This week I kept the recipe pretty simple because the double chocolate mix speaks for itself. I added some coconut yogurt, unsweetened coconut shreds and egg whites to it and voila!


I have mentioned on my other posts how to make it vegan and I will just include that here again because I like to include all our foodie friends!

"These can be made vegan by replacing the yogurt with a dairy free alternative and following these rules for replacing eggs:

  • 2 tbsp ground flax seeds

  • 6 tbsp water

  • 1 tbsp neutral oil

  • 2 tsp baking powder

  1. Combine the flax seeds with the water and let stand for 20 min

  2. Add the flax seed mixture, oil and baking powder to the muffin recipe!"
