Going out to Italian restaurants it always yummy, but isn't the best part when they surprise you with complimentary bruschetta on your table? Or is that only me?
Bruschetta is great and is often oily and scrumptious. The great things about tomatoes are when they're prepared without oil they won't dry out because they're so juicy! In this recipe we don't completely forgo the olive oil because it is essential for the flavor profile but we do add less to keep it light.
Bruschetta is also great because the longer it sits, the more delicious it gets, so it is wonderful for meal prepping. We serve the bruschetta on top of chicken instead of bread to give you a very protein forward dish and then some steamed broccoli because you always need your green veggies!
